  • Cooked Salmon Fillet 250 g · 450 kcal
  • Smoked Salmon 100 g · 160 kcal
  • Unsalted Butter, softened 100 g · 717 kcal
  • Crème fraîche 50 g · 145 kcal
  • Fresh Lemon Juice 15 g · 3 kcal
  • Fresh Dill, chopped 5 g · 2 kcal

👨‍🍳 Instructions

  1. Poach or bake the fresh salmon fillet until just cooked through. Let it cool, then flake the cooked salmon into small pieces, removing any skin or bones.
  2. In a bowl, combine the flaked cooked salmon, finely chopped smoked salmon, softened unsalted butter, and crème fraîche.
  3. Add the fresh lemon juice, chopped fresh dill, and chopped fresh chives. Season generously with salt and freshly ground black pepper.
  4. Gently mix all ingredients together until well combined but still chunky, retaining some texture. Do not mash completely.
  5. Transfer the rillettes to a small terrine or individual ramekins, pressing down gently to remove air pockets. Cover and chill in the refrigerator for at least 2 hours to allow the flavors to meld and the mixture to firm up.
