👨‍🍳 Instructions

  1. Rinse the fish thoroughly and pat it dry with paper towels; make 2-3 diagonal slits on both sides of the fish.
  2. In a bowl, combine lemon juice, olive oil, minced garlic, chopped cilantro, parsley, cumin, coriander, and paprika; season with salt and pepper.
  3. Generously rub the marinade all over the fish, inside the cavity and into the slits; stuff the cavity with sliced tomatoes and onions.
  4. Marinate the fish for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator.
  5. Preheat your grill to medium-high heat (about 200-220°C or 400-425°F). Lightly oil the grill grates to prevent sticking.
  6. Place the marinated fish on the preheated grill and cook for 10-15 minutes per side, depending on thickness, until cooked through and flaky.
  7. Serve the Samak Mashwi immediately with fresh lemon wedges and your favorite side dishes, such as rice or a simple salad.
