👨🍳 Instructions
- Season the cod fillet with salt and pepper, then lightly dredge in flour if desired for a crispier crust. Heat half of the vegetable oil in a large skillet over medium-high heat and fry the fish until golden brown and cooked through, about 3-4 minutes per side. Set aside.
- Add the remaining vegetable oil to the same skillet, then add the thinly sliced yellow onions. Cook on medium-low heat, stirring occasionally, for 20-30 minutes until the onions are deeply caramelized to a dark golden-brown color.
- Once caramelized, remove about half of the onions and set aside for garnish. Add the basmati rice to the remaining onions in the skillet, stirring to coat.
- Pour in the fish broth and stir in the ground cumin, allspice, and black pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice has absorbed all the liquid and is tender.
- Fluff the rice with a fork. To serve, spoon the fragrant rice onto a platter, top with the fried fish fillet, and garnish with the reserved caramelized onions and fresh parsley if desired. Serve hot with lemon wedges.
