👨‍🍳 Instructions

  1. Season the cod fillet with salt and pepper, then lightly dredge in flour if desired for a crispier crust. Heat half of the vegetable oil in a large skillet over medium-high heat and fry the fish until golden brown and cooked through, about 3-4 minutes per side. Set aside.
  2. Add the remaining vegetable oil to the same skillet, then add the thinly sliced yellow onions. Cook on medium-low heat, stirring occasionally, for 20-30 minutes until the onions are deeply caramelized to a dark golden-brown color.
  3. Once caramelized, remove about half of the onions and set aside for garnish. Add the basmati rice to the remaining onions in the skillet, stirring to coat.
  4. Pour in the fish broth and stir in the ground cumin, allspice, and black pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice has absorbed all the liquid and is tender.
  5. Fluff the rice with a fork. To serve, spoon the fragrant rice onto a platter, top with the fried fish fillet, and garnish with the reserved caramelized onions and fresh parsley if desired. Serve hot with lemon wedges.
