- Pat the tuna steak dry with paper towels; season generously with salt and freshly ground black pepper on all sides. For an extra crust, you may roll the edges in sesame seeds if desired.
- Heat olive oil in a heavy-bottomed skillet or cast-iron pan over high heat until it just begins to smoke. Carefully place the seasoned tuna steak into the hot pan.
- Sear for 1-2 minutes per side for rare to medium-rare, depending on thickness and desired doneness. The edges should be well-browned and crispy, while the center remains pink.
- Remove the tuna from the pan and let it rest on a cutting board for 2-3 minutes. This allows the juices to redistribute, resulting in a more tender and flavorful steak.
- Slice the seared tuna into thick medallions and serve immediately with your preferred sides, such as a fresh salad, rice, or roasted vegetables.
