- Preheat your oven to 190°C (375°F) and lightly grease an oven-safe, non-stick pan (about 8-inch diameter) or prepare a baking dish.
- Separate the egg whites and yolks into two separate clean bowls. Ensure no yolk gets into the whites for optimal whipping.
- In the bowl with egg yolks, add a pinch of salt and pepper. Whisk lightly until combined and slightly pale.
- In the other bowl, whip the egg whites with an electric mixer on high speed until stiff peaks form. The whites should hold their shape when the whisk is lifted.
- Gently fold about one-third of the whipped egg whites into the yolks to lighten the mixture, then carefully fold in the remaining whites in two additions until just combined.
