👨‍🍳 Instructions

  1. Preheat your oven to 190°C (375°F) and lightly grease an oven-safe, non-stick pan (about 8-inch diameter) or prepare a baking dish.
  2. Separate the egg whites and yolks into two separate clean bowls. Ensure no yolk gets into the whites for optimal whipping.
  3. In the bowl with egg yolks, add a pinch of salt and pepper. Whisk lightly until combined and slightly pale.
  4. In the other bowl, whip the egg whites with an electric mixer on high speed until stiff peaks form. The whites should hold their shape when the whisk is lifted.
  5. Gently fold about one-third of the whipped egg whites into the yolks to lighten the mixture, then carefully fold in the remaining whites in two additions until just combined.
  6. Melt the butter in the prepared pan over medium heat until it sizzles. Pour the soufflé mixture into the pan, spreading it gently and evenly.
  7. Cook on the stovetop for 1-2 minutes until the bottom is lightly set and golden, then transfer the pan to the preheated oven.
  8. Bake for 3-5 minutes, or until the soufflé omelette is beautifully puffed up and golden brown on top. It should feel springy to the touch.
  9. Carefully slide the soufflé omelette onto a serving plate, fold it in half if desired, and serve immediately to enjoy its fluffy texture.
