  • Desalted Salted Cod (flaked) 100 g · 90 kcal
  • Red Bell Pepper (diced) 25 g · 8 kcal
  • Yellow Bell Pepper (diced) 25 g · 8 kcal
  • Red Onion (finely sliced) 20 g · 8 kcal
  • Garlic (minced) 5 g · 7 kcal

👨‍🍳 Instructions

  1. Soak the salted cod in cold water for 24-48 hours, changing the water every 6-8 hours, to thoroughly desalt it.
  2. After desalting, boil the cod in fresh water for 10-15 minutes until tender and flaky. Drain, let cool, then flake the cod, removing any bones or skin.
  3. Finely dice the red and yellow bell peppers and red onion. Mince the garlic and scotch bonnet pepper (if using). Chop the fresh parsley.
  4. In a large bowl, combine the flaked cod, diced bell peppers, red onion, minced garlic, scotch bonnet, and chopped parsley.
  5. Drizzle with fresh lime juice and olive oil. Season with black pepper and a pinch of salt to taste.
  6. Toss gently to combine all ingredients. Serve immediately or chill for flavors to meld.
