👨‍🍳 Instructions

  1. Bring a pot of water to a rolling boil. Carefully lower the eggs into the boiling water and cook for 6-7 minutes for soft-boiled, or 8-9 minutes for medium-boiled yolks.
  2. Immediately transfer the cooked eggs to an ice bath for 5 minutes to stop the cooking process. Carefully peel the eggs under cool running water.
  3. In a small saucepan, combine soy sauce, mirin, water, granulated sugar, minced garlic, and sliced ginger. Bring the mixture to a simmer over medium heat, stirring until the sugar dissolves.
  4. Remove the marinade from heat and let it cool completely. Once cool, transfer the marinade and peeled eggs to an airtight container or zip-top bag.
  5. Marinate the eggs in the refrigerator for at least 4 hours, or preferably overnight, for best flavor. Gently rotate the eggs occasionally to ensure even marinating.
  6. Serve the soy marinated eggs chilled, halved, and optionally drizzled with a bit of sesame oil and garnished with fresh green onions.
