👨🍳 Instructions
- Preheat your oven to 190°C (375°F). In a large bowl, whisk the eggs with salt and black pepper until well combined.
- Heat olive oil in an oven-safe, non-stick skillet (about 20-25 cm or 8-10 inches) over medium heat. Add chopped onion and cook until softened, about 3-5 minutes.
- Add minced garlic and cook for another minute until fragrant. Stir in the fresh spinach, cooking until it wilts completely, then remove from heat.
- Add the cooked spinach and onion mixture to the whisked eggs, along with grated Parmesan cheese. Stir gently to combine all ingredients.
- Pour the egg mixture back into the same skillet and cook on the stovetop over medium-low heat for 5-7 minutes until the edges are set and the center is mostly firm.
- Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the frittata is puffed, golden brown, and fully set in the center.
- Let the frittata cool slightly in the skillet before slicing and serving. It can be enjoyed warm or at room temperature.
