👨‍🍳 Instructions

  1. Preheat your oven to 190°C (375°F). In a large bowl, whisk the eggs with salt and black pepper until well combined.
  2. Heat olive oil in an oven-safe, non-stick skillet (about 20-25 cm or 8-10 inches) over medium heat. Add chopped onion and cook until softened, about 3-5 minutes.
  3. Add minced garlic and cook for another minute until fragrant. Stir in the fresh spinach, cooking until it wilts completely, then remove from heat.
  4. Add the cooked spinach and onion mixture to the whisked eggs, along with grated Parmesan cheese. Stir gently to combine all ingredients.
  5. Pour the egg mixture back into the same skillet and cook on the stovetop over medium-low heat for 5-7 minutes until the edges are set and the center is mostly firm.
  6. Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the frittata is puffed, golden brown, and fully set in the center.
