- Fresh spinach 200 g · 46 kcal

👨🍳 Instructions
- Wash the fresh spinach thoroughly under cold water; roughly chop it. Peel and finely dice the onion and garlic.
- Heat the olive oil in a non-stick skillet over medium heat. Add the diced onion and sauté until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
- Add the chopped spinach to the skillet. Cook, stirring occasionally, until the spinach wilts down completely and most of its liquid has evaporated, about 5-8 minutes. Season with salt and black pepper to taste.
- Make two wells in the spinach mixture and crack an egg into each well. Cover the skillet and cook until the egg whites are set and the yolks are cooked to your desired doneness, usually 3-5 minutes for runny yolks.
- Serve hot directly from the skillet or transfer to a plate. Garnish with a sprinkle of red pepper flakes or fresh herbs if desired.
