Steamed Fish with Ginger and Scallions

👨🍳 Instructions
- Prepare the fish: Rinse and pat dry the fish fillet. Score the skin a few times if desired, then place it on a heatproof dish.
- Julienne ginger: Slice about two-thirds of the fresh ginger into thin matchsticks and spread them over the fish.
- Steam the fish: Place the dish in a preheated steamer and steam for 8-10 minutes, or until the fish is cooked through and flakes easily.
- Prepare the sauce and garnish: While the fish is steaming, finely julienne the remaining ginger and slice the scallions.
- Finish the dish: Carefully remove the steamed fish, discard the ginger used for steaming, and place the fresh julienned ginger and sliced scallions on top.
- Pour the hot oil and serve: Heat the neutral cooking oil until smoking hot, then carefully pour it over the ginger and scallions on the fish to release their aroma. Drizzle with soy sauce and sesame oil before serving immediately.
