- Swordfish fillet 180 g · 259 kcal

👨🍳 Instructions
- Cut the swordfish fillet into 2.5 cm (1-inch) cubes. In a bowl, combine 10g olive oil, half of the lemon juice, minced garlic, dried oregano, and a pinch of salt and pepper.
- Add the swordfish cubes to the marinade, toss to coat well, and let marinate for at least 30 minutes in the refrigerator, or up to 2 hours.
- While marinating, cut the bell pepper and red onion into similar-sized pieces as the swordfish. Thread the marinated swordfish, bell pepper, red onion, and cherry tomatoes onto wooden or metal skewers.
- Preheat a grill or grill pan to medium-high heat. Lightly brush the skewers with the remaining olive oil and grill for 3-4 minutes per side, until the swordfish is cooked through and lightly charred.
- Remove from heat, drizzle with the remaining lemon juice, and serve immediately, perhaps with a side of tzatziki or a Greek salad.
