👨‍🍳 Instructions

  1. Cut the swordfish fillet into 2.5 cm (1-inch) cubes. In a bowl, combine 10g olive oil, half of the lemon juice, minced garlic, dried oregano, and a pinch of salt and pepper.
  2. Add the swordfish cubes to the marinade, toss to coat well, and let marinate for at least 30 minutes in the refrigerator, or up to 2 hours.
  3. While marinating, cut the bell pepper and red onion into similar-sized pieces as the swordfish. Thread the marinated swordfish, bell pepper, red onion, and cherry tomatoes onto wooden or metal skewers.
  4. Preheat a grill or grill pan to medium-high heat. Lightly brush the skewers with the remaining olive oil and grill for 3-4 minutes per side, until the swordfish is cooked through and lightly charred.
  5. Remove from heat, drizzle with the remaining lemon juice, and serve immediately, perhaps with a side of tzatziki or a Greek salad.
