👨🍳 Instructions
- In a bowl, combine minced garlic, chopped cilantro and parsley, olive oil, and all the Moroccan spices to create the charmoula marinade. Mix thoroughly.
- Rub the fish fillets thoroughly with half of the charmoula marinade and set aside to marinate for at least 15-20 minutes.
- Meanwhile, slice potatoes, carrots, onions, tomatoes, and bell pepper into rounds or wedges, suitable for layering.
- Drizzle some olive oil at the bottom of a tagine or heavy-bottomed pot. Layer half of the sliced onions and bell peppers, then arrange the potato and carrot slices over them.
- Place the marinated fish fillets on top of the vegetables. Arrange the remaining onions, bell peppers, and tomato slices around and over the fish, tucking in lemon slices.
- Spoon the remaining charmoula over the fish and vegetables. Add about 60ml of water or fish broth to the tagine, cover, and cook over low heat for 35-40 minutes, or until the fish is cooked through and vegetables are tender.
- Garnish with extra fresh cilantro or parsley if desired, and serve hot directly from the tagine, optionally with couscous or bread.
