👨‍🍳 Instructions

  1. In a bowl, combine minced garlic, chopped cilantro and parsley, olive oil, and all the Moroccan spices to create the charmoula marinade. Mix thoroughly.
  2. Rub the fish fillets thoroughly with half of the charmoula marinade and set aside to marinate for at least 15-20 minutes.
  3. Meanwhile, slice potatoes, carrots, onions, tomatoes, and bell pepper into rounds or wedges, suitable for layering.
  4. Drizzle some olive oil at the bottom of a tagine or heavy-bottomed pot. Layer half of the sliced onions and bell peppers, then arrange the potato and carrot slices over them.
  5. Place the marinated fish fillets on top of the vegetables. Arrange the remaining onions, bell peppers, and tomato slices around and over the fish, tucking in lemon slices.
  6. Spoon the remaining charmoula over the fish and vegetables. Add about 60ml of water or fish broth to the tagine, cover, and cook over low heat for 35-40 minutes, or until the fish is cooked through and vegetables are tender.
  7. Garnish with extra fresh cilantro or parsley if desired, and serve hot directly from the tagine, optionally with couscous or bread.
