  1. Pat the fish fillets dry and make a few shallow slits on both sides. In a large bowl, whisk together Greek yogurt, ginger-garlic paste, lemon juice, turmeric, red chili, coriander, cumin, and garam masala.
  2. Generously coat the fish fillets with the marinade, ensuring it gets into the slits. Cover and refrigerate for at least 30 minutes, or ideally 2-4 hours, for best flavor.
  3. Preheat your oven to 200°C (390°F) or prepare a grill for medium-high heat. Line a baking tray with parchment paper or lightly oil your grill grates.
  4. Place the marinated fish on the prepared tray or grill. Cook for 10-15 minutes, flipping halfway, until the fish is flaky and cooked through.
  5. Brush with a little mustard oil (or vegetable oil) during the last few minutes of cooking for extra flavor and char. Serve hot, garnished with fresh cilantro and lemon wedges.
