👨🍳 Instructions
- Clean the fish by removing gills and entrails. If using whole fish, separate heads and bones for broth; otherwise, use fillets.
- Place fish pieces, a whole peeled onion, bay leaf, and black peppercorns in a large pot. Cover with cold water, bring to a boil, then reduce heat and simmer gently for 20-25 minutes, skimming any foam.
- Remove fish and onion from the broth; strain the broth through a fine-mesh sieve or cheesecloth for a clear consistency. Discard onion and spices; flake the fish meat, discarding bones.
- Return the strained broth to the pot, add diced potatoes and carrots. Bring to a boil and cook for 10-15 minutes until vegetables are tender.
- Add the flaked fish back into the soup, season with salt and pepper to taste. Simmer for another 2-3 minutes.
- Remove from heat, stir in fresh chopped dill. Serve hot.
