  • Whitebait (fresh) 150 g · 131 kcal

  1. Thoroughly rinse the whitebait under cold running water and gently pat them dry with paper towels. Ensure they are as dry as possible to prevent oil splattering.
  2. In a shallow dish, season the flour with salt and black pepper, then toss the dried whitebait in the seasoned flour until lightly coated. Shake off any excess flour.
  3. Heat about 5 cm of vegetable oil in a large, heavy-bottomed pan or deep fryer to 170-180°C (340-350°F). Fry the whitebait in small batches for 2-3 minutes until golden brown and crispy.
  4. Remove the fried whitebait with a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Serve immediately with lemon wedges and a sprinkle of extra salt if desired.
