👨‍🍳 Instructions

  1. Combine whole wheat flour, mung bean flour, and water in a bowl; whisk until smooth, then let the batter rest for at least 15 minutes.
  2. Heat a large non-stick griddle or pan over medium-high heat and lightly oil it.
  3. Pour a ladleful of batter onto the hot griddle and quickly spread it into a thin, even circle using a T-shaped spreader or the back of the ladle.
  4. Crack an egg directly onto the cooking crepe, break the yolk, and spread the egg white evenly over the surface.
  5. Sprinkle chopped scallions and cilantro over the egg, and cook until the egg is set and the edges of the crepe are crispy.
  6. Flip the crepe (optional, or carefully peel off and place egg-side down), then spread sweet bean paste evenly over the cooked side.
  7. Place a crispy cracker (baocui) in the center, then sprinkle with toasted sesame seeds.
  8. Fold the jianbing from both sides towards the middle to enclose the cracker, creating a rectangular shape, and cook for another minute until warmed through.
